Sausage and Apple Casserole. Ingredients 2 Packs of Sausages. 2 Medium sized Red Onions. 2 cooking Apples 2 400g tins of chopped Tomatoes Sprinkling of dried Sage 1/2 pint of Apple juice 500g tin of new Potatoes Everyone loves Sausages especially the kids. This recipe is quick and easy to do and should serve four. Use your favourite Sausages and quantity to suit. Method Grill the Sausages for about five minutes turning throughout. Make sure you prick them to let the fat drain out otherwise the dish will be swimming in fat. Finely chop the onions. Peel, core and slice the Apples. Gently fry the onion in a large pan in some Olive Oil for about four minutes. Add the Apples Apple juice, chopped Tomatoes and sage. Gently bring to the boil then remove from heat. add sausages and potatoes and simmer for about fifteen minutes. Serve with some crispy bread and enjoy. Jim H
