Easy Microwave Veg Soup  


Ingredients

One large onion

Six Medium carrots

200g of Red Lentils

Three Celery stalks.

Two veg stock cubes.

Method based on 800w microwave.

Finely chop the onion and place in a large microwave bowl [ at least four litre's] with a knob of butter. Cook on high for Four mins. Wash and finely chop the carrots add to bowl with two litters of stock made with the stock cubes. Wash and chop the celery and add to bowl. Rinse the lentils in a sive and add to bowl. Cook on high for Ten mins add a further litre of water then simmer for a further 20 mins or until veg is cooked. You can serve as is, but I mash the soup down with a potato masher to give a smother finish. Almost a meal in itself and a great contribution to your daily five portions of Fruit and Veg.
