Simple Paella Ingredients One medium Onion 200 g of Arborio Rice Garlic Paste One 400g tin of chopped Tomatoes some Paprika 200g of diced Chicken 150g of Prawns 100g of frozen Peas A small Red and Green Pepper One Veg stock cube Method Heat some olive oil in a large frying pan. Add the chicken and stir fry for four mins. Then add the Onion and Peppers[ finely chopped] stir in some Garlic paste. Cook for a further Four mins ensuring Chicken is toughly cooked through. Drain off any excess fat. Now add the Tomatoes. Mix the stock cube in 400mil of boiling water and add. Rinse the rice in a sieve and add. Bring to the boil then cover [ I find a wok lid is ideal for this] and simmer for about ten mins. Add the peas and cook for a further four five mins. By now the rice should be cooked if so then add the prawns [ defrosted if not fresh] and heat through for two mins. And that's it. As the dish cooks the Rice will absorb the water make sure it doesn't dry out by adding small amounts of water as necessary. Jim H
