EasyTomato Soup

Serves 6


  • 2 Onions
  • 1 oz Butter
  • 1 to 2 tbs cornmeal or polenta (depending on consistency of tinned tomatoes)
  • 1 tbs fresh herbs (or 2 tsp dried) - whatever you like
  • 2 tbs sundried tomato puree
  • 2 tbs apple concentrate (optional, but other sweetener may be needed)
  • Salt and pepper
  • 2 tins (1lb/500g) tomatoes, chopped
  • 2 cloves garlic, crushed
  • quarter pint single cream

Sautee onions in the butter for a few minutes. Do not burn. Add cornmeal or polenta and stir well. Add Herbs, tomato puree, apple concentrate and seasoning. Stir well.Add tinned tomatoes and garlic. Combine well and simmer for 10 minutes. Liquidise and return to the pan. Check seasoning. Add water if the consistency is too thick. Add cream and reheat. Serve with fresh bread.
