Microwave Spicy Cauliflower & Broccoli Soup Ingredients One Medium Cauliflower. One Medium Head of Broccoli. Four Medium Potatoes. Pinch of Nutmeg. Pinch Of Curry powder. Two Veg stock cubes. 100g of grated Gouda
Method based on 800w microwave. Roughly chop the Cauliflower , Broccoli and Potatoes. Place in a large microwave bowl with one litre of boiling water. Cook on high for 8 mins. Transfer to another container. Put two crushed Veg stock cubes in two littres of water and pour in to microwave bowl. Liquidise original Cauliflower , Broccoli and Potatoes retaining water they were cooked in. Return liquidised mixture to microwave bowl. Add a pinch of ground Nutmeg and Curry powder and grated Gouda. Microwave on simmer for five more mins. Serve with a swirl of Cream.. Enjoy Jim H
